It's almost been three weeks since Ed and I started our campaign of getting in shape. We've changed our eating habits, went from no exercise to every/other day, and have started to take better care of our bodies. Between the two of us we've lost 11 pounds so far (with Ed losing the most) and our stamina has increased by leaps and bounds. We went snowshoeing on Saturday and neither of us were worn out at the end.

I've made so many new recipes in the last few weeks. Some good, some so-so. Some meat filled, some meat-less. Here are links to all that I've made so far:

Chilaquiles Casserole

Skillet Tuna Noodle Casserole
Crispy Chicken Tostadas
Chocolate Pudding Cake
Orzo Salad w/Chickpea's and Artichokes
Overnight Oatmeal

Tuscan-style Tuna Salad

So with keeping an eye on our calories, eating less snacky stuff throughout the day, more healthy stuff when we're supposed to eat and still being able to have enough calorie room at the end of the day to still enjoy dessert, it's been fantastic. We have one "free" day where we don't count anything (but still eat in moderation) and make it healthy. The kids haven't complained (last night I was donned the best cooker ever). Other than feeling great and losing weight? The meals consist of normal ingredients that don't break the grocery budget!

On to the next weeks!

It really does feel good. I don't feel as sluggish throughout the day or as tired halfway through the day. And it's much easier that both Ed and I are doing this together as I know it would be so hard to stick with it if it was just one of us. :)

Anne introduced me to steel cut oats and I don't think I can go back to rolled oats for morning breakfast. I'm hooked!

I want to do more with veggies, which is my goal for the next few weeks (other than beans which we eat a lot of. :).

So, is this a "here's what you're supposed to eat this week" kind of plan or do you research your menu on your own? I find myself way too pressed for time (lazy?) to find stuff so I need someone to tell me what to do. Course, I can always just copy the hard work you're putting into it too...

I am SO making crockpot oats for tomorrow. I forgot to do that.

it was "find the recipes yourself and make your own menu" type of thing. I just went onto the Eating Well website and started searching around. I read peoples comments too to see the overall review of the dish. You can copy off of me anytime. You have a new recipe out of already! Two if you count the overnight oats! :)

Yay! Go Jean!!! :) I totally need to get some exercise! I'm going kinda nuts here. It's not like I can just go out for a run around here, either. Jumping jacks in my room, perhaps??? Maybe I can lose weight vicariously through you??? No? Oh, darn...

Way to go guys! Seems like the men always drop the pounds faster. I was doing great until we had 2 weeks of company, and a birthday. Oops! Back on it today!

Hills...maybe you can run around after some baby elephants or giraffe's? :)

I hear you Amelia! Our birthday season is upon us starting today with a birthday every 2 1/2 to three weeks until Sam's birthday at the end of March. When I read in the book (in the post above) that when you get side tracked on eating healthy, don't quit! Just get started again the next day and keep going. I don't know why reading that clicked (it's just common sense) but that helps on those days that don't go so great in the eating healthy department. :)
